This pizza crust is convient, quick and easy to make.  All you will need to do is add water and olive oil to the dry ingredients, then simply spread the dough onto your pizza pan or pizza stone, and top with your favorite toppings.  Spelt gives this thin crust a nutty, hearty flavor that lends itself very well to a vegetarian pizza.  We have found a favorite among friends and family to be the buffalo burger pizza.

Pizza is a meal enjoyed by people all over the world for it's snappy taste and easy portable eating. From street vendors to fine pizza restaurants, the pizza is the North American favorite. Some people eat Pizza several nights a week, there are Gourmet Pizzas, Seafood Pizza, Italian style Pizza, New York Pizza, Chicago Pizza, California Pizza, Sicilian  Pizza,  Hawaiian Pizza, Mexican Pizza,  Dessert Pizza, and of course the closely related Calzone.  Over 100 Pizza restaurant chains exist in the United States alone. 


Spelt is an ancient grain that was first harvested over 9,000 years ago.  Spelt lost it's favor during the Industrial Revolution.  Spelt has a natural protective husk that protects it from it's enemies but it must be removed mechanically.  Because wheat does not have such a protective hull, like Spelt does, it can go directly from field to flour mill.  Although over processed and nutrient weak, wheat's high yeilds and low cost have replaced the superior Spelt.

Spelt is a good source of complex carbs, protein, iron, potassium, essential amino acids and components of protein that the body does not manufacture.  Spelt's delicate kernel is easily digested and easy on the immune system.  In Europe, Spelt is still considered a superior gourmet baking grain.

If you are wheat intollerant, check with your physican.  Spelt may be a great alternative to traditional wheat for you.
